In a saucepan over medium high heat, combine the chopped peaches, lemon juice, and honey. Once the lemon juice begins boiling, reduce heat to LOW and cover to simmer for 5 minutes, until very juicy and tender.

In a large bowl, finely mash the canned tuna with a fork. Add the peaches, yogurt, finely chopped red onion, celery, basil, and habanero hot sauce. Mix until very well combined, then season with salt and black pepper to taste.

Butter the outside of your sourdough slices. Add 1 to 2 slices of tomato on the bottom inside slice, season with salt and black pepper, followed by a generous serving of the tuna salad and a slice of cheddar. Sandwich with the top sourdough slice.
Regular cheddar works too if you prefer a milder flavor.
