Savory Oatmeal with Poached Egg

    Cook the oats with water or milk until creamy. Season lightly with salt.

    Trim the tough ends. Either sauté for 2–3 minutes in a pan, or blanch in boiling water for 1–2 minutes. The asparagus should stay bright green and slightly crisp.

    Lightly sauté the mushrooms until golden.

    Bring water to a gentle simmer. Add a splash of vinegar and create a small whirlpool with a spoon. Carefully crack the egg into the water and cook for about 3 minutes.

    Heat the cream over low heat. Add grated cheese and stir until smooth and creamy.

    Cheddar, gouda, or parmesan all work well for the sauce.
