Summer okroshka
Cold refreshing soup perfect for hot days, served with fried potatoes
Steps
- 1Grate the cucumbers
Grate 3 cucumbers on a coarse grater into a large bowl.
Cucumber - 2Chop the green onion
Slice the green onion (2–3 stalks) and add to the bowl.
Scallion - 3Grate the radishes
Grate 9–10 medium radishes on a coarse grater and add to the bowl.
Radish - 4Prepare the eggs
Peel 3 hard-boiled eggs and grate them on a coarse grater into the bowl.
Eggs should be boiled ahead of time and cooled.
Egg - 5Mix the vegetables
Combine all the grated and chopped ingredients: cucumbers, radishes, eggs, green onion, and dill. Mix well.

Pour 500 ml ayran into the bowl. Add 1 tbsp sour cream, optional ½ tsp mustard, and salt to taste. Stir everything together.
Ayran can be replaced with kvass or kefir mixed with sparkling water for a different flavor.

Refrigerate the okroshka until well chilled. Serve cold, optionally with fried potatoes on the side.
Traditionally served with fried potatoes for a perfect summer meal.
