Herby whipped butter with anchovy toast

Creamy whipped butter spiked with lemon, garlic and fresh parsley, served on toasted sourdough with anchovies

Steps

  1. 1Mash the butter

    Add the room-temperature butter to a bowl and using a fork mash it down until it's all fluffy and airy. For ease you can also use an electric whisk or a small food processor.

  2. 2Mix in the herbs

    Add the finely chopped parsley, mashed garlic paste, and lemon zest to the whipped butter and mix well.

  3. 3Toast the bread

    Toast the sourdough bread slices until golden.

  4. 4Spread and top

    Spread a generous layer of the herby butter on each toast. Add a couple of anchovies per toast.

  5. 5Finish and serve

    Squeeze a little lemon juice over each toast and serve immediately.

    The butter stores well in the fridge for 2-3 days.
