Greek-style lemon chicken with crispy skin and lemon potatoes

Steps

  1. 1Preheat the oven

    Preheat the oven to 200°C.

    Place the potatoes in a baking dish.

    In a bowl, mix together: lemon juice, olive oil, mustard, thyme, oregano, salt, pepper and garlic.

    Pour half of the mixture over the potatoes and toss well to coat.

    Place the chicken pieces on top, skin side up.

    Pour the remaining marinade over the chicken.

    Cover the dish tightly with aluminum foil. Bake at 200°C for 1-1.5 hours.

    During this stage, the chicken releases its juices and the potatoes slowly cook in the lemon, mustard & garlic aroma.

    Carefully remove the foil. If there is extra liquid, leave it – it will reduce naturally. Gently toss the potatoes in the juices. Keep the chicken skin side up.

    Increase temperature to 220°C and bake for another 25–30 minutes, or until golden and crispy.
