Steps

  1. 1Prepare the tomato base

    Spread tomato sauce evenly in the bottom of a round baking dish.

    Thinly slice zucchini and tomatoes into rounds of equal thickness for even cooking.

    Layer the sliced vegetables in a circular pattern over the tomato sauce, alternating zucchini and tomato slices.

    Drizzle olive oil over the arranged vegetables, then season with minced garlic, salt, pepper, and dried herbs.

    Cover with parchment paper and bake in a preheated oven at 180°C (350°F) for 40-45 minutes until vegetables are tender.

    Remove the parchment paper for the last 10 minutes to allow the top to caramelize slightly

    Remove from oven, let rest for 5 minutes, and serve warm.

    Garnish with fresh basil if desired
