Traditional Spanish potato salad with homemade mayonnaise and tuna

Steps

  1. 1Boil the potatoes and carrots30 min

    In a pot, bring the potatoes and carrots to a boil for 30 minutes or until cooked through.

    In a saucepan, boil the eggs for 11 minutes and set aside.

  3. 3Prepare homemade mayonnaise

    For the mayonnaise, add to a blender the egg, sunflower oil, extra virgin olive oil, pickle juice, tuna oil, salt, pepper and emulsify well.

  4. 4Cut the boiled vegetables

    Peel the potatoes and roughly chop the carrot and potato.

    In a bowl, add the potato together with the carrot, tuna, grated egg, pickle and finely chopped olives, salt, pepper and mix.

    Add the mayonnaise and blend all ingredients well, then refrigerate for 1 hour.
