Sardine and red onion sandwich

Steps

  1. 1Pickle the red onion15 min

    Slice the red onion into thin half-rings. Mix hot water, vinegar, salt, sugar, and beet juice. Add the onion and let it pickle for 15 minutes.

  2. 2Prepare the sardine filling

    Dice the shallot, pickled cucumber, celery, and cherry tomatoes into small cubes. Finely chop the dill. Add 1–2 sardines to the vegetables and mash with a fork. Drizzle with lemon juice and olive oil, mix well until smooth.

    Mash the sardines with a fork until paste-like consistency so the mixture holds well on the bread

  3. 3Toast and assemble the sandwich

    Toast the ciabatta in butter until golden brown and lightly rub with garlic. Spread with cream cheese, top with the vegetable mixture. Add the pickled red onion and remaining whole sardines, grate lemon zest on top.
