Steps

    Toast the peppercorns in a pan until fragrant, then crush them coarsely.

    Bring a large pot of salted water to a boil and cook the tonnarelli, reserving a cup of pasta water before draining.

    Mix the grated pecorino with some pasta water until you have a smooth cream.

    Add the drained pasta to the pan with the pepper, combine with the pecorino cream and toss while adding pasta water until you reach a creamy consistency. Serve immediately.

    The key is the right temperature: not too hot or the cheese will clump, not too cold or it won't emulsify
