One Pan Creamy Tomato Spinach Pasta

Layer everything in one pan, cook covered, then finish in a silky tomato sauce.

  1. 1Prepare the ingredients

    Slice the cherry tomatoes in half. Thinly slice the red onion. Mince the garlic cloves.

  2. 2Layer everything in the pan

    In a large pan, arrange the pasta nests. Add the sliced cherry tomatoes, red onion, fresh spinach, and garlic around the pasta. Drizzle with olive oil and season with herbs, chili flakes, salt, and pepper.

    You can use spaghetti instead of tagliatelle if that's what you have on hand.

  3. 3Add liquids and tomato sauce

    Pour the plant-based cream and vegetable broth over the pasta and vegetables. Add dollops of tomato sauce on top of the pasta nests.

    Cover the pan with a lid and cook on medium heat until the pasta is tender and has absorbed most of the liquid, about 12–15 minutes. Stir occasionally to prevent sticking.

    Check the pasta halfway through and add a splash more broth if it looks too dry.

    Remove the lid and toss everything together until the pasta is coated in a silky tomato sauce. Adjust seasoning if needed.

    Serve immediately, garnished with extra herbs and a sprinkle of chili flakes if desired.
