Creamy pasta with crawfish in a rich Cajun-spiced sauce

Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package directions until al dente. Reserve a splash of pasta water, then drain.
Don't overcook the pasta — it should have a slight bite since it will sit in the sauce.
