Method

  1. Step 1Cut the beef

    Cut 1 kg beef into large chunks.

    Slice 6 onions into thin half-moons.

    In a large pot, add the sliced onions, cover with a lid, and cook over low heat for about 1 hour. The onions will release their own liquid and gradually caramelize, creating a rich braising base.

    Note

    The onions will caramelize and create their own braising liquid — no need to add water at this stage.

    While the onions cook, season the beef chunks generously with salt.

    After 1 hour, add the seasoned beef, 6 cloves garlic (whole), butter, olive oil, and sugar to the pot with the onions. Stir to combine.
