Method
- Step 1Cut the beef
Cut 1 kg beef into large chunks.
Beef - Step 2Slice the onions
Slice 6 onions into thin half-moons.
Onion - Step 3Braise over low heat1h
In a large pot, add the sliced onions, cover with a lid, and cook over low heat for about 1 hour. The onions will release their own liquid and gradually caramelize, creating a rich braising base.
NoteThe onions will caramelize and create their own braising liquid — no need to add water at this stage.
Onion - Step 4Season the beef
While the onions cook, season the beef chunks generously with salt.

After 1 hour, add the seasoned beef, 6 cloves garlic (whole), butter, olive oil, and sugar to the pot with the onions. Stir to combine.

Cover the pot and continue to cook over low heat for another hour or until the beef is completely tender. Add 2 bay leaves and 3 sprigs of thyme during this stage.
