Steps

    Slice the onion thinly.

    In a bowl, combine the sliced onion, cilantro, garlic, olive oil, red wine vinegar, salt, and black pepper. Squeeze in the lime juice.

    Lemon works in place of lime if you prefer.

  3. 3Marinate the steak

    Place the skirt steak in the marinade, turning to coat. Cover and refrigerate for at least 1 hour or up to overnight.

    Heat a pan over high heat. Remove the steak from the marinade and sear for 3–4 minutes per side until deeply browned and cooked to your liking.

    Medium-rare is ideal for skirt steak.

    Transfer the steak to a cutting board and rest for 5 minutes.
