    Heat olive oil in a large pan over medium heat. Add finely chopped onion and garlic, sauté until softened. Add ground beef and cook until browned, breaking it up with a spoon. Stir in tomato paste, canned tomatoes, and beef stock. Season with salt and pepper. Simmer for 30 minutes until the sauce is rich and thickened.

    In a saucepan, melt butter over medium heat. Add flour and whisk constantly for 1-2 minutes to form a roux. Gradually pour in milk while whisking to prevent lumps. Continue whisking until the sauce thickens and coats the back of a spoon, about 5-7 minutes. Season lightly with salt.

    Keep whisking to avoid lumps in the béchamel.

  3. 3Assemble the lasagna

    Preheat oven to 180°C (350°F). In a baking dish, spread a thin layer of Bolognese sauce on the bottom. Lay down lasagna sheets, then add a layer of Bolognese, a layer of béchamel, and a sprinkle of mozzarella and parmesan. Repeat the layers until all ingredients are used, finishing with béchamel and a generous topping of cheese.

    Make sure the top layer is well covered with cheese for a golden crust.

    Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for another 15-20 minutes until the top is golden and bubbling. Let rest for 10 minutes before serving.

    Letting it rest helps the layers set and makes it easier to slice.
