Marry Me Mushroom Shellbows

Steps

  1. 1Cook the pasta

    Bring a large pot of salted water to a boil. Add the shellbows pasta and cook according to package directions until al dente. Reserve about 1 cup of pasta water before draining.

    The pasta water will help adjust the sauce consistency later

    Heat olive oil in a large pan over medium-high heat. Add the sliced mushrooms and cook until browned and their moisture has evaporated, stirring occasionally. Season with salt and pepper.

  3. 3Add aromatics and tomato

    Add the minced garlic, sun-dried tomatoes, and tomato paste to the pan. Cook for 1-2 minutes, stirring, until fragrant and the tomato paste darkens slightly.

    Pour in the heavy cream and add the grated parmesan cheese. Stir well and let the sauce simmer for 2-3 minutes until it thickens slightly. Season with red pepper flakes, salt, and pepper to taste.

    Add the cooked pasta to the sauce and toss to coat evenly. If the sauce is too thick, add reserved pasta water a splash at a time until desired consistency is reached. Garnish with fresh basil and extra parmesan before serving.
