Pressed Pork Chop
Pan-fried pork chop flattened using a tortilla press.

- 1Prepare the pork
Place the pork chop between two sheets of plastic wrap or parchment paper.
Pork chop - 2Flatten the pork
Use a tortilla press to flatten the pork chop to an even thickness. If you don't have a tortilla press, use a meat mallet or rolling pin.
The bone may prevent the chop from puffing up evenly, but it will still cook through.
Pork chop - 3Make the breadcrumbs
Cut the bread into cubes and process in a blender or food processor until you have coarse breadcrumbs.
Bread - 4Beat the eggs
Crack the eggs into a shallow bowl and beat them until well combined.
Egg - 5Coat the pork
Dip the flattened pork chop into the beaten eggs, letting excess drip off, then press both sides into the breadcrumbs until evenly coated.

Pour the oil into a deep pan and heat over medium-high heat until hot enough for frying (about 170–180°C / 340–350°F).
Vegetable oil - 7Fry the pork
Carefully lower the breaded pork chop into the hot oil and fry until golden brown and cooked through, about 4–6 minutes per side depending on thickness.

Remove the fried pork chop from the oil and place on a plate. Let rest briefly, then serve with lemon wedges if desired.
