Quick Cherry Tomato Pasta

Steps

  1. 1Sauté the garlic

    Heat olive oil in a large pan over medium heat. Add sliced garlic and cook until fragrant and lightly golden, about 1-2 minutes.

    Don't let the garlic brown too much or it will taste bitter.

    Add the whole cherry tomatoes to the pan and cook, stirring occasionally, until they start to blister and soften.

    Gently press the tomatoes with the back of a spoon or spatula to burst them and release their juices. Continue cooking until a sauce forms.

    Meanwhile, cook the pasta in salted boiling water according to package directions until al dente. Reserve about 1 cup of pasta water before draining.

    The starchy pasta water will help create a silky sauce.

    Add the drained pasta directly to the pan with the tomato sauce. Toss well, adding reserved pasta water a little at a time until the sauce coats the pasta nicely.
