Caesar Lettuce Hearts

Griddled lettuce hearts with all the flavors of a Caesar salad

Steps

  1. 1Griddle the lettuce hearts

    Start by cutting the lettuce hearts in half and griddle them in a hot pan with a drizzle of oil. Once they are golden on both sides, remove them.

  2. 2Prepare the garlic infusion

    In the same pan, add a generous amount of extra virgin olive oil and brown a couple of sliced garlic cloves with a pinch of cayenne. Once the infusion is ready, return the lettuce hearts, add a splash of Sherry vinegar, a pinch of salt, and coat them with the garlic oil.

    This flavor will penetrate the lettuce hearts and take them to the next level.

  3. 3Make the Caesar dressing

    To make the dressing, blend all the ingredients except the Parmesan cheese in a blender. Once emulsified, add plenty of Parmesan and blend again. Taste it! This moment is very important to adjust the seasoning and get it to your preference.

    Adjust the dressing to your taste before serving.

  4. 4Toast the panko

    Add a small amount of oil to a pan and over medium heat add a couple of tablespoons of panko. Keep stirring until it's golden brown, then finish with a pinch of salt and lemon zest.

    The crispy panko replaces the classic croutons of a Caesar salad.

    Lots of dressing on the base, the lettuce hearts, more grated Parmesan, a touch of pepper, crispy panko, and a drizzle of extra virgin olive oil.
