Chicken Salad Lettuce Cups

High-protein chicken salad wrapped in crisp romaine leaves

Steps

  1. 1Chop the eggs

    Hard-boil and chop 3 eggs (or use egg whites if preferred).

    Halve, pit, and dice 1 avocado into small cubes.

    Finely dice 1/4 onion.

    In a bowl, combine the chopped eggs, diced avocado, chopped onion, cooked chicken (shredded or diced), and 3 tablespoons of Greek yogurt. Mix until well combined.

    You can adjust the yogurt amount for creaminess — add more if you prefer a moister salad.

  5. 5Prepare the lettuce cups

    Wash and separate romaine lettuce leaves, keeping them whole to form cups.

    Spoon the chicken salad mixture into each romaine lettuce leaf. Drizzle hot sauce over the top to taste.

    Hot sauce is optional — skip it if you prefer a milder flavor.
