Golden crispy turkey pockets with creamy bacon and cheddar filling, perfect for meal prep

- 1Prepare the filling
Cook the bacon until crispy, then chop it. Shred the cheddar cheese. Mix the cream cheese with the chopped bacon and shredded cheddar until well combined.

Season the ground turkey with salt and pepper to taste. Mix gently to distribute the seasoning evenly.

Divide the seasoned turkey into 8 portions. Flatten each portion into a thin patty. Place a spoonful of the bacon and cheddar filling in the center of each patty. Fold the turkey around the filling and seal the edges to form a pocket.
Make sure to seal the edges well so the filling doesn't leak out during cooking.

Roll each turkey pocket in breadcrumbs to coat the outside evenly. Place each pocket on its own piece of parchment paper.
The parchment makes them easy to stack and store for freezing.

Preheat the oven to 200°C (400°F). Place the turkey pockets on a baking sheet and bake for 20-25 minutes until golden and crispy on the outside and cooked through. If baking from frozen, add 5-10 minutes to the cooking time.
These can be frozen before baking and cooked directly from frozen for the same crispy result.
