Greek Blue Zone Sheet Pan Gnocchi

Steps

  1. 1Prepare the gnocchi

    Pour the gnocchi onto a clean sheet pan and set aside.

  2. 2Prep the vegetables

    Cut the red onion into chunks, halve or quarter the cherry tomatoes, and chop the bell peppers into large pieces. Halve the kalamata olives if they're whole.

    Keep the vegetable pieces similar in size for even roasting.

  3. 3Assemble on sheet pan

    Add the chopped vegetables, olives, and garlic to the sheet pan with the gnocchi. Drizzle with olive oil and season with black pepper. Toss everything together to coat evenly.

  4. 4Roast in oven25 min

    Transfer the sheet pan to a preheated oven at 200°C (400°F) and roast for 20-25 minutes, until the gnocchi is golden and the vegetables are tender and caramelized.

    Give the pan a shake halfway through for even browning.

  5. 5Add herbs and feta

    Remove the pan from the oven. Tear the feta cheese over the top and scatter fresh dill, mint, and parsley over everything.

    Add the herbs while the gnocchi is still hot so they wilt slightly and release their aroma.

    Toss gently to combine the herbs and cheese with the roasted gnocchi and vegetables, then serve warm.
