Tuna Watermelon Chess Board
A visually stunning dish with fresh tuna, watermelon, and a tropical gazpacho-style sauce
Steps
- 1Blend the sauce
Add the peach, passion fruit, tomato, cucumber, shallot, garlic, soy sauce, rice wine vinegar and olive oil to a blender. Blend until completely smooth, then pass it through a fine mesh sieve. Place the sauce in the fridge until you're ready to serve.

Cut the tuna and watermelon into equal 2.5cm cubes.

Grab a plate and start arranging the tuna and watermelon cubes alternately until you've created a chess board pattern.

Pipe small dots of wasabi mayo onto the watermelon cubes and add salmon roe on top of the tuna.

Garnish with sliced green onions and pickled peppers, then sprinkle over some sesame seeds.
