You can also microwave the sweet potato for 8-10 minutes if you're short on time, though baking gives better texture.
Sweet potato - 2Split and fluff
Cut a deep slit lengthwise down the center of the baked sweet potato and fluff the flesh with a fork to create space for toppings.
Sweet potato - 3Add parmesan cheese
Sprinkle grated parmesan cheese over the fluffy sweet potato flesh while it's still hot.
Parmesan - 4Layer the pulled beef
Add the pulled beef on top of the parmesan layer.
Warm the pulled beef separately before adding if it's been refrigerated.
Beef - 5Add salsa and toppings
Top with tomato salsa, diced avocado, and crumbled feta cheese.
