Mediterranean-style dip with anchovies, roasted garlic, and olives

Chop the anchovies and roasted garlic, then place them in a shallow serving bowl.

Roughly chop the kalamata olives and roasted red bell pepper. Add them to the bowl.

Pour the extra virgin olive oil and balsamic vinegar over the mixture. Grate the parmesan on top. Add chopped parsley and chili flakes to taste.

Slice the sourdough and toast or grill until golden and crispy.
