One Pot Creamy French Onion Pasta

  1. 1Slice the onions

    Slice 3 large yellow onions thinly.

    In a large pot, heat 2 tbsp butter and 1 tbsp vegetable oil over medium heat. Add 8 oz pancetta and cook until crispy. Add the sliced onions and cook until deeply caramelized, about 20-25 minutes, stirring occasionally.

    Low and slow caramelization brings out the natural sweetness of the onions—don't rush this step.

    Add 2 minced garlic cloves, 1/2 tsp thyme, and 1/2 tsp fresh rosemary. Cook for 1-2 minutes until fragrant.

  4. 4Deglaze with wine

    Pour in 2 tbsp white wine and scrape up any browned bits from the bottom of the pot.

    Add 8-10 oz pasta, 3 cups beef broth, and 1 tsp salt. Stir well, bring to a boil, then reduce heat to medium-low. Cover and simmer, stirring occasionally, until pasta is al dente and most of the liquid is absorbed, about 10-12 minutes.

    Check and stir every few minutes to prevent sticking.

  6. 6Stir in cream and cheese

    Remove from heat. Stir in 1 cup heavy cream, 1 cup grated parmigiano reggiano, and 1/2 cup grated gruyère until melted and creamy.

    Add the cheese off heat to prevent it from becoming grainy.
