Method

  1. Step 1Peel and slice onions

    Peel the onions and cut off the top and bottom. Slice each onion in half horizontally.

    In a large bowl, combine the ground beef, shredded cheese, and Creole seasoning. Mix thoroughly until well combined.

  3. Step 3Stuff the onions

    Remove the inner layers of the onion halves, leaving 2-3 outer layers to form a shell. Fill each onion shell generously with the beef and cheese mixture, then sandwich two halves back together to form a whole stuffed onion.

    Note

    Save the removed onion layers for another use or finely chop and mix into the filling.

  4. Step 4Wrap with bacon

    Wrap each stuffed onion completely with bacon strips, ensuring full coverage and securing the onion halves together.

    Note

    Use toothpicks to secure the bacon if needed, but remember to remove them before serving.

    Season the outside of each bacon-wrapped onion with additional Creole seasoning.

    Place the wrapped onions on the smoker grate and smoke at 225-250°F until the bacon is crispy and the onions are tender, about 90 minutes.

    Note

    Internal temperature should reach at least 160°F for the ground beef filling.

  7. Step 7Glaze and serve

    Brush the smoked onion bombs with BBQ sauce during the last 15 minutes of cooking. Remove from smoker and let rest for 5 minutes before serving.
