Caramelized Onion Pasta

  1. 1Cook the pasta

    Bring a large pot of salted water to a boil. Add the pasta and cook until al dente according to package instructions. Reserve a splash of pasta water, then drain.

    Heat the olive oil in a large pan over medium heat. Add the sliced onions and cook, stirring occasionally, until deeply golden and caramelized.

    This step takes patience—the onions need time to develop their sweet, rich flavor. Don't rush it.

    Add the sun-dried tomatoes to the caramelized onions and stir to combine.

    Pour the coconut milk into the pan with the onions and sun-dried tomatoes. Stir well and let it simmer for a few minutes until slightly thickened. Season with salt and black pepper to taste.

    Add the cooked pasta to the sauce and toss until well coated. If the sauce is too thick, add a splash of reserved pasta water. Garnish with fresh herbs and serve immediately.
