Method
- Step 1Caramelize the onions
Slice the onions and cook them in a large pan over medium heat, stirring occasionally, until deeply golden and caramelized.
NoteDon't rush this step — proper caramelization builds the French onion flavor that defines the dish.
Onion - Step 2Add the mushrooms
Slice the mushrooms and add them to the caramelized onions. Cook until the mushrooms are softened and have released their liquid.
Mushroom - Step 3Add the pasta
Add the dry pasta directly to the pan with the onions and mushrooms.
NoteUsing dry pasta allows it to absorb all the flavors as it cooks.
Pasta - Step 4Add cooking liquid
Pour in enough liquid (stock, pasta water, or water) to cover the pasta. Bring to a simmer and cook, stirring occasionally, until the pasta is al dente and has absorbed most of the liquid.
NoteReserve some of the cooking liquid in case you need to adjust the sauce consistency later.
Pasta water - Step 5Finish with cream
Stir in the cream and season with salt and pepper. Toss everything together until the pasta is coated in a creamy sauce.
